Whole Wheat Brownies

Preheat convection oven to 350°F. Prepare 18 x 26 sheet pan(s) with Buttermist Pan Spray.

Ingredients 60 servings 120 servings Directions
Whole eggs (1) 18 large 36 large In large bowl of electric mixer, mix eggs for two minutes on low.
Granulated sugar weight = 3 3/4 pounds or measure = 7 3/4 cups weight = 7 1/2 pounds or measure = 15 1/2 cups Slowly add granulated sugar and mix well.
Water 1 cup 2 cups In separate bowl, mix together water, oil, dry ButterBuds and vanilla.
Vegetable oil 2 3/8 cups 5 cups  
ButterBuds, dry 1 1/4 cup 2 1/2 cups  
Vanilla 2 Tbsp 1/4 cup Add to egg & sugar mixture. Mix one minute on low. Scrape down bowl as needed.
Whole wheat flour 1 1/3 cup 2 2/3 cups In separate bowl, sift together remaining dry ingredients.
Enriched white flour (1) 1 1/3 cup 2 2/3 cups  
Cocoa, unsweetened dry powder 2 1/2 cups 5 cups  
Non-fat dry milk (1) 1/4 cup 1/2 cup Add dry ingredient in two stages to mixture, mixing for 30 seconds on low after each addition. Scrape down bowl as needed.
Portion size 3" x 2" serving One pan cut 6 x 10 Two pans cut 6 x 10 Dust prepared sheet pan(s) with cocoa powder. Pour batter into prepared pan(s). Bake 20 - 25 minutes, or until toothpick inserted in center comes out clean. Transfer to freezer to cool and to pre-freeze for ideal cutting conditions. Brownie is a moist, dense cake and pre-freezing reduces crumbling during cutting.
