Pasta Au Gratin

Stovetop preparation: Spray steamtable pan(s) with Buttermist Pan Spray to keep food from sticking.

Ingredients 50 servings 100 servings Directions
Water 5 gallons 10 gallons Bring water to a boil.
Salt 2 Tbsp + 2 teas 1/3 cup Add salt to boiling water.
Pasta, made with enriched flour (1) Yield based on elbow macaroni 2 lbs 10 oz 5 lb. 4 oz Slowly stir in pasta into boiling water. Cook uncovered until tender-firm, about 10 minutes. DO NOT OVERCOOK. DRAIN WELL. DO NOT RINSE.
Milk, fluid reduced fat or low fat (Using non-fat dry milk is not recommended ) 1 quart 2 quarts In sauce pot, warm milk. Do not boil.
CheddarBuds, dry 4 cups 8 cups Add dry CheddarBuds and Cayenne pepper and stir until dissolved.
Cayenne Pepper 2 Tbsp One quarter cup  
Liquified ButterBuds Mix* 1 quart 2 quarts Add liquified ButterBuds mix to warm mixture. Mix to a smooth consistency. Stir in drained pasta. Coat well. Separate into prepared steamtable pans.
Portion size 1/2 cup (No. 8 scoop) One 2" deep full steam table pan Pour approx. 6 1/4 quarts/pan. Two 2" deep full steam table pan Pour approx. 6 1/4 quarts/pan. Spray steamtable pans with Buttermist Pan Spray, original or garlic to keep pasta from sticking.

* Liquified ButterBuds: 1 quart = mix 1- 4 oz envelop dry ButterBuds with 1 quart warm water and stir.

Cost reduction tips:

(1) Use commodity ingredients when available.
HACCP: Hold at 140˚; Store in refrigerator; Cover & reheat to 165˚ in 350˚oven
